Good Mornin Sun is Shinning



Good Morning Sun is shinning that always makes me Happy :)
And so was our Special Girl!

Yesterday Bill and I went to Wendys to try out their new Burger  the one with the Blue Cheese, pretty good!  We were sitting by the window and the sun was shinning on us we sat their just soaking up the Sun.  I didnt think we were ever going to get up LOL it felt so good.
Cindy and the girls must be getting cabin fever they came by twice this week already!  Iam not complaining its always nice too have them drop by it breaks up out day also. Of course we all like to sit in the room with the computer because some one is always doing something on it. And of course we let Julie watch what ever she wants and sit in the rocker recliner her favorite chair eating her signature pop corn and then Ice cream we want her to be with us and not alone in a different room. We didn't go to Church last night for the Soup Suppers we needed a break from last week. Since St Patty's Day is coming up soon I will be sharing a few recipes just in case they might inspire you to try them. Their not mine I copied them.

 Irish Cream Coffee Fudge


3/4 c. butter

3 c. sugar

1/3 c. evaporated milk

1/3 c. Irish Cream

1 tbsp. instant coffee

1 jar marshmallow creme (7 oz)

1 package vanilla chips (12 oz)

1 tsp. vanilla

1 c. chopped hazelnuts (filberts)

In a microwave safe cup, cook Irish Cream on HIGH 30 to 45 seconds until hot enough to dissolve the instant coffee. In a large pan or Dutch oven, on medium heat, melt the butter, add sugar, evaporated milk, Irish Cream and coffee mixture, marshmallow creme, then mix well. Bring to a full boil, stirring constantly, for 5 minutes.
Remove from heat and stir in vanilla chips until completely melted and mixed thoroughly. Stir in the vanilla, then the hazelnuts until mixed well.
Pour into a greased 8-inch square pan and spread evenly. Chill until set and cut into 1-inch squares. Yield: 3 pounds

This recipe and its not the same as my Uncle Bills family recipe for Maple Fudge
But everytime I see a recipe for fudge I think of him.
He was famous for his fudge making especially for gifts at Christmas we always looked forward to him bringing them down to our house he lived at the other end of our block.
 He was My Dad's middle Brother.
