Today being Blue berry pancake day here is a super recipe..


The recipe I make is on the box of Bisquick a great recipe as well as this one.


Ingredients

1 3/4 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 cup milk, plus more if needed
1 cup sour cream
1 stick butter, melted
1/2 teaspoon vanilla extract
1 1/2 cups fresh or frozen blueberries
1/2 teaspoon lemon zest

Directions

Sift the flour, sugar, baking powder, baking soda and salt into a large mixing bowl. In a separate large bowl, lightly whisk the eggs. Add the milk, sour cream, half the melted butter and the vanilla, whisking to blend. Make a well in the dry ingredients and pour the egg mixture into it. Whisk the ingredients together just until blended. Fold the blueberries and lemon zest into the batter.

Heat a large skillet or griddle over medium heat and coat with some of the remaining melted butter. For each pancake, pour about 1/4 cup of the batter into the hot skillet. Cook 3 or 4 pancakes at a time, depending on the size of the skillet. If the batter seems too thick, thin it with 1 to 2 tablespoons milk. When bubbles begin to form and "pop" on the pancake's surface, after about 1 minute, and the outer edge looks done, flip it over and cook briefly for about 30 seconds on the other side.

Easy Blueberry Coffee Cake 

  Ingredients

For the cake:
2 ½ cups biscuit mix (like Bisquick)
½ cup sugar
1 cup blueberries
½ cup sour cream
2 eggs
3 tbsp. milk
½ tsp. vanilla extract

Crumb Topping:
1/2 cup sugar
1/3 cup flour
4 tbsp. butter (cut into small cubes)
 
Directions:
Preheat oven to 350F degrees

Spray 9x13 baking dish  with nonstick cooking spray (I like the kind that has flour in it)

In a medium bowl combine biscuit mix and sugar.  Add sour cream, eggs, milk and vanilla extract. Mix until combined. Batter will be very thick.  Gently stir in blueberries by hand. This will take a few minutes because batter is thick.

Scoop batter into prepared baking dish and make sure it is evenly spread.

 In a bowl, combine sugar, flour and butter. Using your fingers or a pastry cutter, start combining mixture until it looks coarse and crumbly.
 
 Sprinkle mixture over dough.

 Bake about 30-35 minutes until a toothpick inserted comes out clean.

I'm Back Again.

Here I am sharing again, it will be brief!! I just want to share a few photos a recipe and tell how lucky I am that I'm not back home where its minus what ever the number is for the moment. Of course I know it will change but in the mean time  Sorry folks but its sunny and beautiful here this morning a bit windy but  my kind of weather..

Yes that's the top of a Palm Tree, Im doing a test with my Lap Top.
 I don't have my tower here and I'm used to working with it where I have a lot of my photos that I take saved..



Pretty and Oh so juicy fresh picked right off the tree in the middle of winter.. That's called amazing.


Yes these beauty's are growing right here.

We went to the beach, I loved it.



Ok enough said. Let me give you the recipe.

Orange Cupcakes


Ingredients

2 cups all purpose flour
3 eggs
1 cup of granulated sugar
a pinch of salt
1/2 cup unsalted butter
2 tbsp of oil
1 1/2 tsp baking powder
1/4 cup water
1/4 cup orange juice
1 tsp orange extract

makes about 16 cupcakes


  • Line a cupcake pan with cupcake liners. Preheat oven to 350 deg F
  • In a large bowl, add butter & sugar; cream until light and fluffy.
  • Add eggs one at a time,beat well after every addition. Add orange extract and oil.
  • Mix flour,salt and baking powder well. Add this dry mixture to the creamed mixture alternately with orange juice and water.Beat well after every addition.
  • Beat until smooth.Pour batter into cupcake liners 3/4th full.
  • Bake in preheated oven for 25-27 minutes or until a toothpick inserted in the cake comes out clean.
  • Cool for 10 minutes before removing from pan.Cool completely and frost with your favorite frosting.
