Sunny Day Out There, BUT!!

I know you want to know whats the weather here in Illinois,  COME ON, I know you do.Here's a picture taken from my back deck.
LOL . it is frosty cold whoooo I love it!! I don't feel guilty doing my art in PSP I don't feel like I should be out their doing something resourseful like crawling around in my flowers pulling weeds and you know things like that. Now you believe me dont you.. Although I do enjoy winter, I do miss the nice weather!  I try to make the best of a bad situation especially when you cant do anything about it, so I am trying to be happy LOL yes I sure am, Im Happy :) thanks to my family who I talk to every day and have taught me so much on the computer over the years and to my youngest Sister  whom I talk to maby 2 to 3 times a day. She has helped me to do so much in psp and I love it. Thanks!!! Now we have a new adopted grand daughter Liz who visits and has dinner with us befor she heads off to work,  thanks Liz!  that all helps to get us thru these long days of Winter in Illinois.  Of course my Fantastic relatives whom I  share my everyday life with weather they like it or not, thank you guys you make our day as well. I may not always say it but I love you all and thanks for being a part of our life no matter what the age difference you are all pretty cool in my opinion. I also love making all the birthday greetings and I hope you like them as much as I enjoy making them for you and I think you do, at least most of you let me know one way or another. thats cool. WHOOOPS befor I close almost forgot to mention I didnt make the cookies I said I was going to make yesterday we went for coffee and had a gab fest with our friends at Barns,  by the time we got home after solving all the world problems their with out friends and grocery shopping after coffee  we bought donuts instead! were bad arent we but they are OHHH so good. I hope the girls find the time to stop by and help us eat them. OK enough soap box got to get down to business I have a birthday greeting to be working on .CHOW for today stay Happy.

Hi Cold Cold!

Hi cold cold cold 9 degeese this morning!
My little puppies dont like it. How do you like the new page and the add one's their pretty cool aren't they. That's me always doing changes when I have the time.
 I think I will be venturing out today we have been hold up in the house for a few days doing a lot of nothing LOL. Iam going to make cookies today I am making the recipe up we had left over bananas and choc chips so I thought they would be different in a sugar cookie mix I will let you know how they turned out and of course I will take a picture and share the recipe if they are worth sharing. Bill had to wear a thingie on his fingure all night to test the oxygen in his body ??? So now it sits in between the doors waiting for someone to pick it up.  This has been one winter with Bill and his health issues hope fully now that they tested everything from top to bottom it will be back to normal. And we can plan a trip to Vegas. I know some of you say why not go some where else, sorry!! but I like to go their and I feel comfortable their.. Our Niece posted some ausome photos of their resent trip and I have been in all of those fabulous places it brought back some great memories. Thanks Maria I really enjoyed seeing them, you cover a lot of territory when you were their and I remember we used to do the same walk from one end to the other. Now we just kind of hang close to where we stay. Been their Done that but it was fun in the  younger days..

Snow Snow Go Away!!

Just in case you wondered YEP its snowing not hard just enough to make for crappy weather. Last night about 9:30 I sweep of the back  deck so my little sweeties woulden't have to wade thru it, so what do they do go flying across the yard the neighbors grand dog was out. Cant win!!  Bill went for his stress test it was over in about 2 hours I wasent expecting him for a few more hours. He got home just in time to eat some apple pie that our next door neighbor brought over fresh out of the oven.

She also made me a afghan a total suprise. She is the most kind hearted person I have ever met and we are lucky to have them as neighbors she is 83 her husband 84 she even volunteers at the hospital once a week. She was a Nurse in the sico ward at the hospital for 30 years a very special Lady. Her Daughter is a big shot executive at the same hospital for over 25 years. She started out as a nurse and just kept advancing a very smart Lady. Thats all from me I just had to share my pie and afghan news. She is always bringing me goodies. I feel guilty because if I do bake we eat it LOL or the family comes over and they enjoy it, so I really dont give them much at all. Thats all from me, I have to get back to my art project on the computer.

Snowing Again!!

OMG Snow again we finally just got rid of all the snow that has been on the ground for a MONTH and its coming down again.
 I am happy I was able to get out their the last three days and clean up in the back a little especially the doggie doo doo. LOL.
I couldent stand the thoughts of it being their. I am a nut when it comes to that. some people arent but I am.


We celebrated Julies 6th birthday yesterday we all went to the bowling alley and bowled and came back here for pizza and cake. Steve and Liz picked it up on the way back here it was great and I love the newest creation its really good YUMMM bacon, onion and  banana peppers you know the ones in the jar so fantastic I love the combination. Thanks for forgetting it I plan to eat it for lunch LOL Oh and whats left of the Ice cream cake you guys for got that also, I guess I will have to eat that too :).. It was great!! Here is a photo share of the happy occasion.
Bill is going to the Doctor today for a check up wish him well he really seems to be doing quite well after a long sick spell. TGFT.. He says he's not 100per cent but a lot better. Just wanted to keep an up date on that.
Here is a Recipe Share for today one of my favorites tuna salads  no other compares to it and I have had it all over the place. Cog Hill Golf Course in Lemont has the best Tuna Salad and here is my version of it.

Diane's Tuna Salad


2 - 5oz cans Albacore tuna in water drained
Hillmans Mayonnaise (desired amount)
1/4 tesp garlic powder
celery (desired amount)
1 small onion chopped fine
4 queen olives chopped fine
hot banana peppers chopped fine (desired amount)
As you can tell I am a what ever works for me kind of cook
Mix well serve on Crousant with lettace or toasted bread of your choice.

Our Turn Is Over For Hosting The BookClub until Fall!

Our Turn Is Over!
The book club was so cool some of our regulars were not able to come they went out of town for a month because we have cold snowy not so nice Januarys here in the Mid West.  Especially when you get older you really notice it when you go out to feed the birds and squirrles and leave the dogs in and out.  We just never wanted to get out of Dodge because who would watch our pets for that long! We would rather  have our two dogs all year it is much more fun on a day to day bases than not having them we thoroughly enjoy them. Although the older we get we are going to do some heavy thinking about going some where warmer for the month of January with the pets. As I keep repeating in previous posts LOL

Bill picked up a yellow cake frosted with fluffy frosting and covered in coconut at our local Jewel(he loves coconut) they made it for him as he did his shopping. I am sick with a cold so didn't feel up to making anything. The cake was amazing we really loved it, we had it befor so we knew it was good, we also served butter pecan ice cream with the cake a dessert to die for LOL And as usual not diet food. but oh so good.  It was really nice to have a smaller group and no one seemed in a any hurry to go. We had the fire place going and that is always a cozy  none of them have one and I think they enjoyed it. It was a miserable day and  night! rain Ice, cold and I thought for sure no one would come. But they did. I think Iam going to wrap up this post for today I have some straightening up to do from yesterday also some creating to do on the computer. Here is a little something I made yesterday its called pixel art something I really enjoy.

Icy Morning one of natures dangers, I am terrified of Ice my oldest sister broke her leg on the ice getting in her car on her drive way, my Mother broke her hip slipping on the ice in a grocery store parking lot, she went their to buy a gift card for one of my sisters for a Christmas gift, that was the beginning of her many problems after that. My favorite  Aunt Rose who I was very close with  fell and cracked her head and that caused the beginning of  many problems for her. Almost forgot my Mother in Law broke her pelvis twice slipping on the ice on her drive way out to get her mail and paper. So when you read this you understand why Iam terrified of ICE. Today is garbage pick up and its Icy out their on the side walk and drive way you cant be to careful.. I will take one giant step out the side garage door to the grass first I will throw ice melt out their then drag the garbage over to the grass that is covered in snow hoping that will help and I wont be stepping on the ice. OMG the things we have to put up with living in the Mid West. Here is a cool photo not one of mine but my cousin sent it out that she took  of Frozen Fog yes Frozen Fog I think its so cool and have never heard of Frozen Fog befor this year! we are having our usual January, Bitter Cold, Ice, Snow Wind all the fun things winter in the Mid West is all about. I am not a fan of January Iam seriously thinking of going some where else warmer next January my brother said we could come their but I dont want to impose for a whole month I am sure he thinks we really wont go any where LOL. That was nice of him to offer. Maby we will have him check into rentals for a month out their we will definitely think about it. Today is our book club and Bill and I have runny noses YUCK Oh happy day.  On a happier note our Great Grand Daughter turned 6 yesterday she is our special little girl and we love her actually we love all our special Grand Children we are lucky we have a wonderful relation ship with our Daughter and  family, the party is Sunday and I hope we are feeling a lot better with the runny noses by then. HUMMM what kind of recipe can I share today.
 Here is a picture of Bills favorite meat loaf its really good and he always makes a lot so we can share.

I should have dressed up the plate, sorry but take my word its so good.

Bills Meat Loaf

1 LB Bob Evans country sausage
1 1/2 Lbs ground chuck
1 tesp dry mustard
1 tesp salt & fresh ground pepper
1/2 cup plain bread crumbs
2 beaten eggs
1 can diced mild green chilies
3/4 cup chopped green onions
Cook onion in butter until  lightly browned
 combine all ingredients mix well.
Pat mixture into 9x5 loaf pan
Bake at 350 1 1/2 hours
Remove from oven pore off any grease
 let stand a few minutes befor slicing, serves 8

I told You Its Not A Diet Dish!

Another Its Not Diet Food!!

Its still winter and thats when I do serious cooking what else is their to do besides do art on the computer, clean or cook. Here is a little thing I made today the outline was drawn by my friend Lisa,  my Sister, Lisa and I take turn's drawing outlines for our Web Group in the Pixel Art Area of our group. I never had a cat (afraid of them) Iam enbarrassed to say LOL (Long story.) I always enjoy  creating cats here is one I did today.                         Please do not take !!
Yesterday I made Mac and Three Cheese                          
 Cheddar, Mozzarella and Peper Jack Cheese, it turned out awesome if I do say so my self.. I made it up, I like these three cheeses so I figured why not give it a try and YEP its good.
Another crazy I did today was change a couple pieces of furniture around Iam really happy with the way that looks as well. it must be a sign! is it called cabin fever LOL OH almost for got wiped down the back windows with my trusty pole with a lambs wool  applicator on it, I love that thing no more climbing ladders to wash windows its super fantastic. I just couldent stand they were a bit dirty.

Here is my recipe.
Mac & Three Cheese


1/2 Box elbow macaroni
cooked aldenta and drained
10 oz Sharp Cheddar
10 oz Mozzarella
10 oz Pepper Jack
 all Cheese's grated
1 /2 stick of Butter
1 regular size can Carnation evaporated milk
Melt butter coat elbo macaroni with melted butter.
In seperate pan
On low heat
 add cheeses and evaporated keep stiring until cheese is melted and everything is incorporated. Stir in Macaroni place all in caserole dish .
Sprinkle plain bread crumbs on top
 I use the canned varity.
Bake 350 for 1/2 hour un covered
I hope you enjoy it as much as we do.

Quiet Day So We Cooked _ Hot Dogs and Kraut Recipe

Today was a quiet  day nothing to exciting,So we cooked!! the snow is melting to to slow and my little Sally is having a hard time with the snow out their, she has an injury from being crazy and jumping off the beds so now we have to keep her off the beds because she has been in a lot of pain all week. Although today she is better but not 100 percent. Abbie is  four years older she is much stronger she weighs 5 Lbs more and we call her our moose a name from her original Grand Mother and I kind of thought it was cute so I call her that now and then. Bill and I cooked up a storm today so we shouldent have to do much cooking this week Its our turn this week for the book club and I dont want to be nose high in dishes and cooking.  We like to make large amounts so it last for a couple of days plus we can make a plate to freeze for Steve who goes away to collage and I know he appreciates it because he tells us he enjoys it and dosent turn it down. Thats one of the ways we help out besides we enjoy it. The only thing he turns down is spaghetti and I make a fantastic spaghetti he dosent know what he is missing. I have been busy also today coloring drawing and creating in PSP one of my obsession's Iam making a birthday quilt its turning out so cute Natuarally LOL.
That's all from me today I want to get back to my creating in PSP. short for paint shop pro.
Here is a picture and recipe of my cooking creation. I dont know what you call it but I like it. Something I made up years ago.

6 slices of bacon fried crispy
4 par boiled potatoes not completely done
1 onion chopped
I package Ball Park Franks cut in bite size pieces
or Smoked Sausage Hillshire Farm is the one I prefer
1/2 stick of butter
I can Kraut rinced

Fry bacon remove, satue onion and bite size pieces of hot dogs or sausage in bacon greese( I didnt say this was diet food ) remove from pan once you think its browned enough for your taste, add butter melt add rinced and drained kraut saute start adding into baking dish all ingredients that you sauteed and removed previously stiring to combine.  bake in 350 oven 30 min

Non Eventful Day

Kind of a non eventful day today no weather to complain about!
 It actually got up to 41. 5 degreese and I went out to clean up as much doggie doo doo as I could fine and got it out to the garbage pick up befor they came to pick up the garbage. I was trying to beat the clock. And I made it I was thrilled about that.
 Bill went to the Doctor his regular visit and no N1H1 shots their yet! when he came home we went to Menards to buy a helligan bulb for his desk light and of course no bulb so I said why not buy a cheep lamp instead and thats what he did its actually really kind of cut their on his desk. Of course I always like new things. We also ended up buying two new pictures for above the bed in one of our bed rooms and I cant believe the way they color coordinate with the drapes and bed spread so it was a must have. I love them.

Here is a recipe share from a friend she gave it to me yesterday. I havent tried it but she was raving about it so I thought I would share. Here it is.

Scalloped Mushrooms
3 - 8oz cartons sliced frest mushrooms
8 oz shredded cheddar cheese
1/3 cup chopped onions
10 strips bacon fried crisp (or sub real bacon bits)
3/4 to 1 cup Mayonaise
Place a thin layer of bread crumbs in 9x13 pan

Mix all ingreadents together pour on top of bread crumbs 
cover and bake 325 for 45 minutes serves 6 to 8
Now you know this has to be good its got cheese and mayo in it. LOL

BURRR I thing its going to be in the 20s Today.

Today is starting out to be I dont want to mention that word but we all know what it is as that has been my main topic as of late.

 A hint BURRR!!


Bill had an appointment for a stress test yesterday but that was cancelled due to the machines being down, I think the word is out all the Dr. in the area want him JUST Kidding LOL, he was happy about the machines being down. They rescheduled for later in the month. he has lost 30 lbs over this ordeal he is going thru for the past few months he is really happy about that. The bad news is when his meds ran out last week he had the same problem back again just like the surgery never happened they dont know if it might have been blood that was already their so they have him back on the meds and the bleeding stopped right away.
Yesterday he made coconut Banana Bread Cindy gave us 6 bananas from her freezer so we wanted to do something with them. He also made dinner last night so he is doing well. He just cant do any heavy lifting for a while.
Today I go to my Circle meeting at our church with friends we always have a good time most of them are in the book club also so we have become friends.

I almost forgot to mention, the plate is from my Brother in Law
given to me many many years ago,  a treasure of the past.

Here is Bills recipe

 Banana Coconut Bread
Prep time 15 min
Bake 1 hour ro 1hour  15 min
serves 10
Ingredients
1tesp baking powder
1 1/4 cups all purpose flower
1/4 tesp salt
1 stick (12 cup ) butter
2/3 cup sugar
1 large egg
1/2 tesp vanilla
1/2 cup walnuts chopped
3 very ripe bananas, he used 6
3/4 cup sweetened flaked coconut

Directions
preheat oven to 375
Grease a 4/8 loaf pan with butter dust inside with flour
Mix Flour baking powder and salt in a bowel
in another large bowl mix butter sugar egg and vanilla
 add walnuts and mashed banana continue mixing
Add 1/2 cup of coconut to mixture combine the contents of the two bowels together
Transfer the mix to a prepared loaf pan
Bake for 1 hour or more until tooth pick comes out clean.
After a while and its completely cooled dust with powdered sugar .

Our turn for the book club coming up!

Our turn for the book club coming up!

Our turn will be coming up for the book club we belong to on the 21st. Its from our Church and we were invited right away to join they probably wanted to know who are these people coming from Chicago out here to the Country.. We have been in it for over 3 years now and we really enjoy it al thought I think I read a whole book once LOL they dont care and thats good for me I dont have time with all I do in my groups to read a book so Bill usually will make an attempt at reading some of it. We take turns having it at a different house every month. I am moving this here, moving that their, changing this and re arranging that.. LOL does it make sense. I will be glad when its over their are usually 13 to 16 of us we serve drinks to get you loosened up and talk about the book for maby five minutes.  The rest of the time we talk about everything, we try to solve the world problems and if someone dosent like some one they never mention it to anyone at least not at the book club. It is a  I love everyone type of group and I like it that way not talking bad about anyone. Half way thru we have dessert and coffee its really a nice thing to belong to in a small town like the one we live in, you get to know a little about the locals something we find very interesting coming from a big City we are amazed at how these people love to travel. Its part of their life style out here where they are going next for their next vacation. Of course thats what Seniors do isnt it LOL if they are lucky and their health permits.

It was _-11 when I got up I could not believe it I dont ever for years remember -11 will we had one today and that didnt stop any one from going out. Church was crowded as usual and we went out to breakfast with our book club friends its really kind of fun. Time to close I have some work to do.

-2 this Morning

 -2 this morning
Always something to say about the awful winter weather we are expericing here. I dont like it! to cold and my poor puppies cant stand it especially Sally she has a really hard time with it. We met the girls at the Mall for lunch I didnt think I would be able to make it because we had promised the Church that we would help take down the Christmas decorations but by the time I got their the worst was over. There was more help this year than usual and that was really nice 45 minutes at the most I was their of course some were their 1/2 hour befor I got their and they had talked it with gusto.  I am embarrassed to say I live the closest to the Church of all the members and I was the last one their. Iam so bad .LOL  I was able to meet the Girls after all  it was just nice to get away from the house and computer for a few hours. Although I have a lot of projects to do on the computer Iam backed up being the first of the year and we have been closed down for about a month in the web group I own with a internet friend and my sister. Also we have  a 3 year anniversary coming up our group being on line.. WHOO HOO how exciting..three years amazing and we are still hanging in their that time really flew by.  I have to get back to my drawing Iam making Birthday Tags to post on our site and they take some time so Iam cutting this short Oh and I dont want to close with out saying Get Well to my wonderful Nephew Scott he is in the hospital with a stint put in his heart and a blood clot removed from his veines, so so sad we are praying for him to have a speedy recovery.We love you Scott and Chrissie they have had their share of sickness lately hang in their you two sending positive healing thoughts your way.
Here is the soup I promised in a previous post and it always taste better the nexrt day.

 Bills Beef Vegetable Soup
Adapted from his fathers original recipe



3 to 31/2 Lbs Chuck Roast

4 carrots chopped

2 onions chopped

Celery hearts plus 2 stalks of celery chopped

3 turnips diced

3 parsnips diced

4 russet potatoes diced

28oz can diced tomatoes

48oz container beef broth (Collage Inn)

2 cans V8 11.5oz size

Brown meat in large pot using olive oil after well browned remove any grease.

Return meat to pot add all vegetable except potatoes and carrots, also adding all the above liquid.

When meat is tender remove and cut up into bite size pieces return to pot adding diced potatoes and carrots continue cooking until all vegetables are tender. Salt to desired taste.

Big Snow Storm Today!

We have been bombarded with snow today, actually I enjoy it now that Iam retired and dont have to drive any long distance to go to work. although I never did have to go far to work 4 miles was the furthest I lived from work during the snowy months here in Illinois. I can remember years ago the blizzard was so bad that we were let go from work a little early and a UPS truck was going by just as I about to pull out of the parking lot,. I followed it all the way home short of a 1/2 mile from my house talk about some one looking out for me. He lead the way something I will never forget.  I lived in Chicago and we would get some amazing snow storms because of the lake effect storms. We didnt even have a place to get rid of all the snow so we  would throw it over the fence into the back yard to get it out of the alley so we would be able to park our car in the garage.
I shoveled off the back deck 3 times so far today and a path leading to the bird feeders out by the arbor so our little dogs would have a path to walk in and  it wouldent be to deep to go out to feed the birds. I also shoveled the front sidewalk although we have a guy do out snow shoveling this year I couldent control my self hard to break old habits and I like the exercise. I did save the drive way for him and the sidwalk in front of the house. He does an amazing job and so reasonable we really enjoy having him. Bill bought another  new snow blower last year and now we hire some one, he wants to hang on to it just in case our guy isnt able to do it.


 Bill made his signature Beef Vegetable Soup today a recipe he aquired from his father who was the main cook when he was growing up. Bill has perfected it and we just love it especially on a cold snoey day like today cant wait to have a bowl.
I will get his recipe and post it tomorrow . I have a big art project Iam working on.

Did I mention Its Cold..


I dont like mentioning this but its cold and suppose to get even colder next week. amazing! I dont like experiencing record breaking cold the last really cold spell was in the 80s YUCK I think we will move South for the winter a real serious thought. So happy I have my computer it really entertains me and keep's me from getting board. Especially belong to groups, doing art in PSP and owning a group with an internet friend and my Sister.

The Wrens went South for the winter, that's who loves those little houses we have here and their in the back of our house. They are the noisest but I actually miss them.

I always take bird seed out by the arbor to feed my little feathered friends and here is what the door looks like when I open it. Just thought you would like to see what a frosty door looks like thats a snow shovel propped up in the corner waiting for the next big snow fall that is suppose to come in tomorrow.  YES more snow.

I cant believe I actually spent the past two days moving 1714 photos that I had in folders on my computer into my Fotiki site where I permentaly store all my photos for the past few years, I love that storage site! I  have been doing that for the past few years at the beginning of the new year. I was shocked at how many I had, of course with the resent family weddings and family picnic's this past year that helped to accumilate a lot more than usual.
That's all from me today I have to get out my fluffy pink duster and put it to work.

Exciting!! Another Cold Day.

Morning Here in Illinois
 COLD COLD COLD
It is January and its one of our coldest months in Illinois, it will even get worse later in the month! arent we lucky.. Iam trying to get up the courage to go out and feed our feathered friends we usually fill up the feeders once a day and they usually devour it. We havent seen blue boy sad to say he and lavender have been gone for a couple of weeks now, she went first I dont have a clue I am hoping they both went South thats what I am wishing for for them. I was busy yesterday all the photos I took in 2009 I store in folders on my computer so once a year I move them to my Fotki site a free site for photo storing but I pay because I want the  extras that go with it. Yesterday we hurried home from church we didnt even go to breakfast with our friends Bill wanted to make a turkey. It turned out wonderful we havent had one since Thanksgiving and we like to have turkey once in a while especially in the winter its a comfort food for us occasionally.

Below is my recipe share for today!
 I love this stuff its so good I got the recipe from my dear  friend Janet, she calls me all the time and keeps me up dated. We worked together side by side for 15 years and were  gone from their for 13 years. The company we worked for sold out to another company they moved way North and we didnt go with we took out 4O1K and retired.
 OMG I cant believe how the time flew although I only retired at the time for 4 months my sister talked me into going to work where she worked and I was happy I did it was a great place to work. I met a lot of famous people who are only people after all LOL so thats how we treated them.
Now Iam officially retired and enjoying life.
Here is Janets Recipe her Birthday is coming up the 8th she always enjoyed sharing a birthday with Elvis.

Caramel Popcorn

Ingredients

1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn
 (I use O-KE Doke Corn Pops)
Add

Directions
Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

Happy New Year Day 2


Another Cold Morning
Its over all the Christmas decorations are packed away and its - 2 here. Yep minus! The start of our wonderful winter in Illinois. I am so glad I fed the birds yesterday evening it wasent in the minuses then.
I am so thank full that I learned the computer it has saved me from these cold long winters. I would be totally bored with out it, sitting around feeling sorry for my self. I have become so creative and knowledgeable because of it.
Thanks to all that helped me get started My Sister, My husband, My Daughter and Grand Children I drove them crazy they have all been instrumental in helping to get me started six years ago befor that I worked, cleaned and cooked At the time thats all I knew sounds exciting dosent it. And now I have developed many on line friends and family that I share every days events with I Love It!!
The family comes over and they know just where I am sitting, here creating LOL they cant believe what a monster they created LOL.

Stuffed Mushrooms


Ingredients
12 large fresh mushrooms
5 tablespoons butter, melted
salt and pepper to taste
1/4 cup butter
1/2 cup chopped onions
1 tablespoon all-purpose flour
1/2 cup heavy cream
1/4 cup chopped fresh parsley
1/2 cup shredded Swiss cheeseDirections


1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2.Remove stems from mushrooms. Finely chop stems and set aside. Arrange caps hollow side up in the baking dish. Drizzle with 5 tablespoons melted butter, and salt and pepper to taste.
3.Melt 1/4 cup butter in a medium saucepan over medium heat. Stir in the mushroom stems and onions, and cook 5 minutes, or until tender. Gradually blend in flour and heavy cream until smooth. Remove from heat. Mix in parsley.
4.Generously stuff mushroom caps with the mixture. Top with Swiss cheese.
5.Bake 15 to 20 minutes in the preheated oven, or until lightly browned.
