Rain Rain

Like my Blogger buddies from the Mid West said its a dreary day, a good day to do a major project and that's just exactly what I did.
 I washed down the kitchen top to bottom up and down on the ladder and I have a lot of choc hies in that room and everything is sparkling clean now for another year.
 Its good to have a dreary rainy day and not have a group on the Internet any more its amazing how much I have been getting done. I know I have said it before but I don't miss all the work involved with owning a group.

Here is a little creation I made yesterday in this group I belong to.
I like the way it turned out it was a lot of work but its worth it.
Bill made his famous Meat Loaf today but not soon enough Steve and Liz ate the Chicken Gumbo Bill made yesterday and they had it late last night there probably gumbo out now LOL because it wasn't ready and they both have to go to work this evening.
We'll at least have it for tomorrow and I think they will be over tomorrow sometime.
I know we'll have it just in case Brittney would like some she is doggy sitting for our dogs tomorrow, we are going down town to see a play at the Apollo Theatre and Lunch at the Sopranos Restaurant. Italian food one of my favorites.

I know its not summer yet but here is a great summer time recipe share.


Peach Berry Jubilee
Servings: 6-8



Comments:

This is undoubtedly one of the lightest and most delicious desserts you'll ever taste. Since fresh peaches are typically more available during summer, summer is a great time to serve this dessert. However, frozen peaches (not canned) will do fine any season.


Ingredients:

2 fresh peaches or 1 package frozen peaches

1/2 cup fresh mixed berries* (blueberries, blackberries, raspberries) *Note: Frozen berries work very well

1 (6 to 8 ounce) container peach yogurt

2 tablespoons honey

1/4 teaspoon ground cinnamon

Dash of ground nutmeg

1 tablespoon light margarine

1 store bought ready-made graham cracker crust or homemade pie crust

Light whipped cream

Instructions:

Rinse fruit thoroughly. Slice peaches then place in large bowl. Place the berries in the same bowl and mix together with sliced peaches. Melt margarine in a frying pan at low temperature. Once melted spoon fruit into pan and let simmer. Add the honey, cinnamon, and nutmeg. Stir until well blended and fruit is soft. After simmering, place fruit into a bowl and refrigerate until cool. After fruit has cooled mix the yogurt into the cooled fruit. Spoon mixture into crust. Spread whipped cream over fruit mixture and sprinkle a dash of cinnamon over whipped cream.

Prep time: 15 minutes.

Makes 6-8 servings.
