Hot still in the Mid West _ Pineapple Streusel Pie


Another week flew by and it hasn't been uneventful, So glad of that. We finally did get some rain we sure did need it, actually not enough rain but very welcome. That's Summer in the Mid West. our weather goes from one extreme to the other just like yours Im sure..

I did take a few photos this week. I was busy  with other project so not much time has been spent taking the time to take pictures. The girls and I went shopping Saturday it was a long day and fun!! Thanks Steve and Liz for stopping by to keep your grand pa entertained for a few hours he really enjoyed you doing that I was gone for over 8 hours can you believe that. Just to go shopping.. Julie and Brittney were the lucky ones this trip. I think Megan bought a few things her self not sure. We stopped and ate of course and than shopped again..

Friday we visited at Barns with our group of old friends, we haven't all been together for a long time, we all kept missing each other. So arrangements were made to be there at a certain time that worked out great and it was good to coffee clutch with them all again. We will all be coffee clutching again on Friday that seems to work for all of us.
 Thursday evening we went to our once a month book club another fun gathering with great people something we really enjoy. At church one of our friends who has been sick and in a nursing home came to church, his wife brought him It was so sad to see him. It reminded me of when Bill was that sick if not sicker we will be praying for him, and the family, a major sickness effects all loved ones  I know as I have been through just that..

Im also adding a recipe share. I bought a pineapple streusel pie something I used to buy years ago and loved, at a very favorite bakery when we lived in Chicago. I didnt have a recipe so I looked one up and Im sure its just as delicious as the bakery one.

The girls got a hair cut friday they sure did need it and look and smell so much better.

Pineapple Streusel Pie


Temperature: 350° F

Ingredients

Pastry:
  • 1 1/2 cups unbleached flour
  • 1/4 cup sugar
  • 1/2 cup butter or butter flavored shortening
  • 3-4 tablespoons cold water
Filling:
  • 1 large fresh pineapple, cut into small pieces
  • 2 tablespoons corn starch
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
Streusel:
  • 3/4 cup flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 2.25 oz bag macadamia nut pieces

Instructions

Mix flour and sugar. Cut butter into flour mixture. Sprinkle water over mixture and gently stir and form a ball. Chill. Roll about 1/4 inch thick. Gently place in 9" pie pan and crimp edges.
Mix sugar and cornstarch in medium pan. Add pineapple and lemon juice and stir thoroughly. Cook over medium heat until pineapple thickens and bubbles. Let cool about 15 minutes.
For streusel, mix flour and sugar. Cut or rub in butter. Mix in nuts.
Pour pineapple into pastry lined pan. Cover with streusel topping. Bake about 45 minutes at 350 degrees, or until top is browned and filling is bubbly. Let cool before serving.

Although this recipe dosent call for it.
 I would drizzle 1 cup of powdered sugar
 1 to 2 Talbspoons of milk 
 combined to make a thick frosting and drizzle all over the pie.

  1. Wonderful blog again Diane - and it is still cold in Australia. I am glad you have had some nice times with friends and that Bill is able to enjoy that too.
