Hot still in the Mid West _ Pineapple Streusel Pie


Another week flew by and it hasn't been uneventful, So glad of that. We finally did get some rain we sure did need it, actually not enough rain but very welcome. That's Summer in the Mid West. our weather goes from one extreme to the other just like yours Im sure..

I did take a few photos this week. I was busy  with other project so not much time has been spent taking the time to take pictures. The girls and I went shopping Saturday it was a long day and fun!! Thanks Steve and Liz for stopping by to keep your grand pa entertained for a few hours he really enjoyed you doing that I was gone for over 8 hours can you believe that. Just to go shopping.. Julie and Brittney were the lucky ones this trip. I think Megan bought a few things her self not sure. We stopped and ate of course and than shopped again..

Friday we visited at Barns with our group of old friends, we haven't all been together for a long time, we all kept missing each other. So arrangements were made to be there at a certain time that worked out great and it was good to coffee clutch with them all again. We will all be coffee clutching again on Friday that seems to work for all of us.
 Thursday evening we went to our once a month book club another fun gathering with great people something we really enjoy. At church one of our friends who has been sick and in a nursing home came to church, his wife brought him It was so sad to see him. It reminded me of when Bill was that sick if not sicker we will be praying for him, and the family, a major sickness effects all loved ones  I know as I have been through just that..

Im also adding a recipe share. I bought a pineapple streusel pie something I used to buy years ago and loved, at a very favorite bakery when we lived in Chicago. I didnt have a recipe so I looked one up and Im sure its just as delicious as the bakery one.

The girls got a hair cut friday they sure did need it and look and smell so much better.

Pineapple Streusel Pie


Temperature: 350° F

Ingredients

Pastry:
  • 1 1/2 cups unbleached flour
  • 1/4 cup sugar
  • 1/2 cup butter or butter flavored shortening
  • 3-4 tablespoons cold water
Filling:
  • 1 large fresh pineapple, cut into small pieces
  • 2 tablespoons corn starch
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
Streusel:
  • 3/4 cup flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 2.25 oz bag macadamia nut pieces

Instructions

Mix flour and sugar. Cut butter into flour mixture. Sprinkle water over mixture and gently stir and form a ball. Chill. Roll about 1/4 inch thick. Gently place in 9" pie pan and crimp edges.
Mix sugar and cornstarch in medium pan. Add pineapple and lemon juice and stir thoroughly. Cook over medium heat until pineapple thickens and bubbles. Let cool about 15 minutes.
For streusel, mix flour and sugar. Cut or rub in butter. Mix in nuts.
Pour pineapple into pastry lined pan. Cover with streusel topping. Bake about 45 minutes at 350 degrees, or until top is browned and filling is bubbly. Let cool before serving.

Although this recipe dosent call for it.
 I would drizzle 1 cup of powdered sugar
 1 to 2 Talbspoons of milk 
 combined to make a thick frosting and drizzle all over the pie.

Pictures share from Me - Happy Birthday Tom

I haven't  Blogged all week so here is my weekly what ever is happening to me Page.. I hope it doesn't bore you to much.
The past couple of week have been really HOT for us here in the Mid West almost to hot to spend to much time out side if you dont have to. So that's exactly what I have been doing trying to stay in as much as possible, in the air where it cool and comfy.. I only go out to shop, I will venture out occasionally with the dogs,  water my plants and grass, feed the birds, then hurry back in.. Its just been to hot and humid for me almost over 100 every day for over a week amazingly hot for us here in the Mid West.. The girls all came over three times this week so that was fun, we would hang out here, go to lunch, also out to shop, and make plans for Bills birthday and our 50th anniversary coming up. so our week wasn't boring at all.. Megan made these amazing cup cakes and she will make her special recipe for our anniversary, for Bill and I to bring to church to share with our church friends.
I also took a few pictures this week, Not surprised are you there :) nothing out of the ordinary just something  I like to do, take pictures and share them. I hope you see something you like.

Photo and Recipe Share, Chocolate Chip Turtle Cookies

Im Back after a very busy busy week!


I took this picture last night, I thought the clouds looked pretty.

I have been doing the usual watering this and that
 all around me everyone's grass is brown, not mine.. I water I cant stand brown grass silly I know but thats me..
 I know its only grass BUT..
I have also been going to the Vet, doing the dishes constantly, even though I have a dish washer, laundry,  carpet cleaning seven rooms, dusting, vacuuming, shopping, going to Cindy 3 of the days and watering her things and letting her dogs out. You know all the fun things that go with every day happenings.. I swear it never ends..
 I need a vacation.. I wish Bill was well enough to take one maybe this winter Hoping ..
 I did take a lot of pictures as well this week I will post some.

  I have a yummy recipe to share..
 I bought these amazing cookies at the local store and I just had to look for a recipe.
 They were delicious..
I am a big cookie fan..

It was really comical he was really afraid but he's finally gone.

Chocolate Chip Turtle Cookies


1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 tsp vanilla
2 1/4 cups unsifted flour
1 tsp baking soda
1/2 tsp salt
2 cups (12oz) semi-sweet chocolate chips
12 caramels, each cut into 8 pieces
1 cup pecans, chopped
If you like I suggest adding
2 Tablespoons of Hershey coco powder.

Heat oven to 375ºF.

Stir flour with baking soda and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add vanilla and eggs, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in nuts, caramel and chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown.
