While You Were Asleep!
I was out there in the below freezing temperatures taking photos of the amazing sky..
I know it sounds crazy, but I just am absolutely amazed with the sky and nature.
It has never ending mystery and beauty. And since I love to take pictures i am like a kid in a candy store..
Sharing below a few I took the past week.

Always a welcome sign that Spring in on the way..
I couldn't wait for no threat of snow and put some of my bling bling's out, although since! as a matter of fact the same day, they are predicting up to 7 inches of snow for us.. OH Joy.
Bill and his girls they love him.
Bill has been through a lot more than I could ever blog about and I'm sure we don't want you all and us to feel sad. Because this blog is about Happy times Not for sharing the not so happy..
Bill is a strong strong man and all I can say is its a good thing he amazes me. Now I totally under stand how he got where he did in his working career. You don't get to the top by being a wiss plus he is a super compassionate kind person who doesn't know the word Hate and Be Ugly to any one that just isn't Him.. He's still hanging in there and living life the best possible way he can.
He has Acute Leukemia I never knew what cancer was all about.
I had it but it was removed and I was well, not like Leukemia.
I don't know any one who has met him that doesn't like him. He did not have a silver spoon in his mouth growing up a tough tough life coming from a tough tough neighborhood.. That's what made him strong nothing was handed to him on a silver spoon.

Yesterdays Sun Rise, Awesome.
Yesterday while I was out messing around in the yard.
I added water to the bird bath it froze over night..
Our beautiful Sun Rise this morning.
How about the bird on the very top of the tree checking things out or ma by soaking up the sun.

They all came out to meet me they were not afraid.
Some one must be feeding them they were so tame.
This regal guy is still here he survived the winter.
I remember him from last fall with his one leg he's a survivor..

This is from the other day, a medical helicopter landing on top of the hospital.
At the Park see that car heading towards me he was super weird.
I wasent afraid until I got home and thought about what he said..
He didn't see Bill sitting in the car, Im sure of that..
They seen me coming and ran..
They are scrambling for food today it must be a sign of some nasty weather coming in.

Time to share a recipe since I haven't shared one for a while.
Italian Easter Pie
Serves 8
6 eggs + 1 egg for egg wash
2t olive oil
1 small onion, finely diced
8 oz. diced prosciutto
8 oz. ricotta cheese
2 oz. shredded sharp provolone cheese
2 oz. Grana Padano cheese
2 oz. shredded fresh mozzarella
3 T grated Parmesan cheese
1t water
pepper
1. Preheat oven to 350.
2. Roll out your bottom pie crust. Place the bottom pie crust in a 9-inch deep dish pie pan. You could also use a cake pan for this. Do not crimp sides yet.
3. Saute diced onion in olive oil until soft and golden, about 5 minutes. Let cool.
4. In a large bowl, beat 6 eggs. Add the ricotta and whisk until lumps are gone. Add prosciutto, provolone, Grana Padano and mozzarella cheese. Add cooked onion and black pepper to taste.
5. Sprinkle grated Parmesan cheese on the bottom pie crust.
6. Pour egg mixture into your pie crust.
7. Roll out top pie crust and place over pie. Fold the overhang of the top crust over and tuck it behind the edges of the bottom crust. Crimp them together.
8. Beat your remaining 1 egg with 1 teaspoon of water. Brush over top and edge of pie. Cut a slit in pie to vent.
9. Bake 40-50 minutes until top starts to look golden brown.
10. Let rest for 10-15 minutes before serving. This is important so it won't ooze all over when you cut it!
