Here it is the end of July already.
And where I live its Hot now 98 for the next few days..
I always try if I remember to post a few times for Christmas in July.
I have been busy trying to keep up with my work around here and have fun as well.
Not always happening but I try.
I did take a lot of pictures because that's what I do its one of my fun things.
I drive everyone crazy with my cell taking pictures, every where I go Im clicking away.
I have this great Nikon with lenses but I am to lazy and just use the cell, so easy.
I went back to my family twice already this year for a visit and I took a few pictures.
Everyone is doing well and I am always happy to see that.
SO Now Ill share a few of the pictures from my 5 months of not blogging.
Hope you enjoy them if you haven't seen them already.

The scenery here is always beautiful.
Here we went to a concert. we try to go at least 2 to 3 times a month if possible.
We went to one last night, Little Anthony and the Imperials.
There are always great groups from our area performing.
I love going to the polo field especially when we see the horses.
I dont know the reason but this one has been by her self for a few weeks now. Im thinking its that time of the month.
Pete was making noises to get her attention so I could take her picture.
Beautiful flowers everywhere.
Our house its beautiful and we love it, good choice Cindy and Bill.
I wanted to make sure I got everyone at some point in this Blogg.

I couldn't resist taking another photo of Mittens
I was terrified of cats probable most of my life until Mittens.
She is just so affectionate and she loves me.
I have so many sunsets and sun rises their is no way I can post them all.
We went down town one day and I got a blister on my foot that took three weeks to finally heal.
But it was totally enjoyable any way, being with the family.
That's my special guy and our sweet Lizzy doing what we do often
listening to music, drinking our coffee and people watching.
Life is good.
We look like two chubbies but were not the camera lied.

They are doing much better at bonding.
We always go to the square almost every night and watch the people dancing sitting talking and enjoy the bands playing there amazing music or the performers entertaining everyone. What a Place.

German Chocolate Pecan Tarts
Ingredients:
Pie Crust
- 1 1/4 cups all purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 1/2 tablespoons oil
- 1/4 cup cold unsalted butter, cut into small pieces
- 4-6 tablespoons ice water
- 3/4 cup pecan halves
- 1 large egg
- 1/2 cup dark corn syrup
- 1/2 cup granulated sugar
- 1 tablespoon unsalted butter, melted
- 1 ounce unsweetened chocolate, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/3 cup sweetened flaked coconut, toasted (optional)
Instructions:
To make the pie crust, in a large mixing bowl, whisk together the flour, 1 tablespoon sugar and salt until well combined. Work in oil and butter, using a pastry blender or two forks, until well incorporated and mealy. Drizzle in a tablespoon of water, and lightly toss dough together with a fork. Continue until you can form a dough ball and form a disc. Wrap in plastic wrap and chill an hour or until cold.
Heat oven to 350 degrees F. Roll out pie dough round on a lightly floured surface, using a floured rolling pin, as thin as you can. Cut out rounds, using a cookie cutter or shot glass, and press into a 24 cup mini muffin pan.
Toast the pecans lightly in the oven for 8-10 minutes or until fragrant; coarsely chop.
In a large mixing bowl, whisk together egg, corn syrup, 1/2 cup granulated sugar, melted butter, chocolate, vanilla, and salt until well combined. Stir in pecans and coconut until well combined. Drop spoonfuls of pecan filling into prepared tart shells. Bake 10 minutes, or until puffed and golden brown. Cool a few minutes before removing from pan.
This recipe makes about 48 mini tarts
