Sunny Windy Saturday! Recipe Chocolate Toasted Hazelnut-Almond Biscotti

Happy Labor Day Weekend

I made this little creation today and had to show it off.

We had a real treat Thursday evening my cousin from Arizona and her husband stopped by for a visit I ha dent seen them for years and it was such a joy to have them pay us a visit. Although we do keep in touch on face book it was a thrill that they actually took the time to pay us a visit. They lived here   before they made the big move to Arizona about 10 years ago. They looked so fantastic tan and fit. Not like us pale and chubby. LOL


We don't have any real plans for Labor Day, its not really a holiday for us were retired and everyday is a holiday.
Yesterday Bill I and Cindy went out to Fuddruckers for lunch it was nice we all love their Burgers  and Cindy hadn't been their for a long time. We went across the strip mall parking lot to Toys R Us and picked up a couple of things for Julie for Christmas of course we will probably give her the Toy Story Bear the next time she comes over, why wait until Christmas  that's to far off and she really wants one so we'll sunrise her.

My back is doing better, although it docent feel like it in the morning. As I get motivated it does get better. Of course I over did it today. I felt so good I know Ill pay for that. its a beautiful day a bit windy actually a lot windy in the up er 60 we have been having 90s for over 38 days so this is a real treat especially for a couple of days to have the windows open. Of course the weather man is predicting more 90 next week but not for long. I'm loving this break in the weather.
 Of course at night it gets cool and we have to close the windows.

We went to the Farmers Market again this morning we didn't go crazy this time actually their weren't any peaches or blue berries and the corn we bought wasn't actually our favorite not like in the beginning of the season it was fantastic. so needless to say we didn't buy any corn.

What we did buy was Biscotti one of my very favorites I just love this one stand theirs Biscotti.
So I'm looking up a recipe I think is similar and posting it further down.

Oh and cant forget the Pulled Pork Sandwich we ate in the car on the way out, befor going to the grocery store.
It was so good. or maybe its because It was the first thing I had to eat all day.


Here is a great recipe I found for one of my favorite cookies
 Biscotti
I hope you like it.

Chocolate Toasted Hazelnut-Almond Biscotti

2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup sugar

1/3 cup blanched whole almonds, toasted

12 ounces bittersweet chocolate, cut into small chunks with a heavy knife

1 1/2 cups whole hazelnuts, toasted and peeled

2 eggs

1 teaspoon pure vanilla extract

1/4 teaspoon pure almond extract

2 tablespoons almond liqueur (recommended: Amaretto)

Up to 4 tablespoons water

Directions

Heat oven to 375 degrees F. Grease a large sheet pan. Sift the flour, baking powder, baking soda, salt, and sugar together. Transfer 1/2 cup of the mixture to a food processor. Add the toasted almonds and grind until fine and powdery, about 45 seconds. Add to the dry ingredients. Add the chopped chocolate and whole hazelnuts and mix.
Whisk the eggs, extracts, and almond liqueur together. Add to the dry ingredients and mix. The dough may seem dry, but it will come together as you work it. If the dough doesn't come together, add water. Turn the dough out onto a lightly floured surface and divide into 2 equal pieces. Wet your hands and roll each piece of dough into a flattened log about 10 inches long, 3 inches wide, and 1-inch high.
Transfer the logs to the pan, leaving at least 3 inches between the logs (they will spread during baking). Bake until golden brown, 25 to 30 minutes, rotating the pan after 15 minutes to ensure even baking.
Let cool 30 minutes.
Reduce the oven temperature to 300 degrees. Carefully transfer the logs to a cutting board. Wipe off the sheet pan and grease it again.
Using a serrated knife, cut the logs on the diagonal into 1/2-inch-thick slices, discarding the ends. Arrange the slices cut side up on the sheet pan. Bake until toasted, 20 to 25 minutes. Turn the oven off, prop the oven door open, and let cool completely in the oven to set the chocolate. Store in an airtight container.
I will put a chocolate glaze on them it makes them extra special.

  1. It IS a beautiful day. Glad to hear you enjoyed it, although I am sorry you didn't get more fruit. I was hoping you'd make more of that DELICIOUS crumble we had the last time we stopped by!!! Julie and I will probably go for a walk when I'm done typing this. Thank you for getting Lots O Huggin' Bear but PLEASE do not give it to her next time you see her. She is saving up for him, and I think it's a good lesson that she's learning. Let her save the money for him first. Julie is spoiled and expects everything to get handed to her, so she really needs to learn this lesson!

  2. Not a problem we will save it for Christmas or when she gets enough money together, we have it. When the time comes you can tell her we picked it up because we were afraid they would all be gone.
